Sweet & spreadable, this unique blue balances mildness with intensity for a crowd-pleasing bite. Aged 3-4 months. (PRICE PER POUND)
A Perfect Pairing
Spread Gorgonzola Dolce on Mini-Toasts and drizzle with a fine, single-varietal honey – Tupelo honey is perfection here. A stroke of Mourvedre results in your own masterwork!

The Full Wheel
In 1927, twenty-five year-old Giovanni Ciresa began to collect and mature select cheeses before expanding his reach to mozzarella, yogurts, pecorino, taleggio – and this gorgeous & supple blue. The Cirsesa name and standard of quality thrive on with Gorgonzola Dolce! Gorgonzola is one of the world's oldest blue-veined cheeses, and this recipe is produced west of Milan in Cameri, strictly using old-world traditions. Gorgonzola Dolce is cured for more than 50 days to obtain its nutty aroma and its mild, creamy flavor with a sweet taste. Spreadable, with a consistency akin to cream cheese, it lives up to its Dolce title (meaning “sweet”), delivering mellow complexity in a super-rich texture. For those that believe they don’t do blue, this cheese will create enthusiastic new converts!
