TUPELO HONEY / Savannah Bee Company
Bees feeding on Tupelo trees in designated areas of Florida and Georgia bless us with this prized, smooth & mellow honey. (3OZ PER JAR)
A Perfect Pairing
Honey is a must on a well-conceived cheese board, and Tupelo is regarded as the finest N. America has to offer! You cannot go wrong with drizzling Tupleo honey over L’Amuse Gouda, Ossau-Iraty and Bayley Hazen.
The Full Jar
Produced in the threatened Tupelo ecosystem of the Altamaha and Apalachicola River Basins of Georgia and Florida, this honey is rare & highly coveted, effortlessly living up to its nickname: "Queen of the Honey World.” Tupelo Trees can be found along the borders of rivers, swamps and ponds in the remote wetlands of Georgia and Florida. Tupelo Honey specifically comes from just a few rivers, the most prominent being the Apalachicola and Ochlockonee rivers. The greenish Tupelo tree flowers bloom for only 2-3 weeks across each April and May. Hives are housed on remote docks that are only accessible by boat, and production exists only in a tiny subculture. Certified tupelo honey cannot be heated, processed, mixed or filtered. Tupelo honey has unusually high fructose content (versus sucrose) and will not granulate or crystallize. Pure tupelo honey is light amber in color with a slight green cast. It has a pear-like and hoppy aroma and a mild, delicate, buttery and floral flavor, which will go beautifully on nearly anything - be it cheese, meat, bread, or even in a cup of tea!
